1 yellow cake mix
1 can pineapple slices (drain & save juice)
(cherries optional)
3/4 c. brown sugar
1/2 stick butter
Melt butter in your skillet w/ brown sugar. Once sugar is dissolved position pineapple slices. Mix cake mix according to the box replacing water w/ pineapple juice. Pour cake mix over pineapple slices & sugar mixture. Cook @ 325 until toothpick comes test clean. Plate it up & Enjoy!
I made this every year in a well-seasoned cast iron skillet. Haven't made it now for over 25 years at least. I'm going to make it a tradition and have it every Christmas! Thanks for the memories!
