OVEN - ROASTED VEGETABLES
2-3 med sweet potatoes
2 med. onions (yellow/red)
1 lg. green bell pepper
1 lg. red bell pepper
whole/sliced mushrooms
cloves of garlic
baby carrots
cherry tomato
2 Tbs olive oil
1 Tb Italian spice
Preheat oven to 350 degrees. Cut/peel potatoes into 1 inch pieces. Cut onions into 1/2 inch wedges. Cut peppers into 1 inch pieces. Peel garlic cloves. In roasting pan, toss vegetables with oil and herbs until coated good. Roast 30-45mins until potatoes tender, stirring occasionally.
